To celebrate our Apron collaboration with Daen's Kitchen, we hosted a gnocchi pasta cooking class at our Cargo Crew HQ commercial kitchen in July 2022. The night brought together the perfect ingredients: wine, cheese, pasta and talented foodies. All 30 attendees were welcomed with their very own personalised Cargo Crew Boston Apron and spectacular cheese platters from That's Amore Cheese.
The winner of the Daen's Kitchen Apron competition, Sarah, along with 4 friends joined the class and family style Italian sit down dinner afterwards.
We let the flour fly during the class as Daen talked through a step-by-step recipe to her delicious ricotta gnocchi. It was a true family affair with Daen's mum on hand as her sous chef. Read on for her coveted family recipe below.
INGREDIENTS
METHOD
1. Add the ricotta, egg yolks, parmeson and salt to a large bowl.
2. Slowly add in your flour as you mix your dough together with your hands.
3. Tip your dough onto a lightly floured work surface and knead until a smooth ball forms. If your dough is sticky slowly add more flour. The dough should feel soft, delicate and moist.
4. Cut your dough into four equal sections and roll out each section into a sausage shape as thick as you thumb.
5. Using a butter knife, cut into your desired shape.
6. In a heavily salted pot of water, cook your gnocchi for 1 - 2 minutes or until they rise to the top of the water.
7. Drain your pasta and add to a tomato and basil sauce or sauce of your choice.
8. Serve your ricotta gnocchi with some fresh basil and parmeson on top.

Pasta Class Winner
Known as the queen of olive oil, we chose to include an 🫒 olive on everyone's personalised aprons. Daen also launched her new olive oil collaboration with Rich Glen, a family business based in Yarrawonga, regional Victoria.
After the pasta class, we sat down to an Italian style family dinner enjoying the Rich Glen olive oil, selection of cheeses from That's Amore, wines from Astro Vino and of course our handmade gnocchi!
A winning recipe for laughs and very full bellies, topped off with Daen's delicious tiramisu for dessert.
